Ingredients:
4 cups glutinous rice (use rice measuring cup)
2 cups brown sugar (or muscovado for darker color)
1 can (400ml) coconut milk or cream
A pinch of salt
3 tbsp coconut oil from latik (or butter/margarine)
4 cups water (for cooking rice)
Banana Leaves
For the Latik:
1 can coconut cream/milk
Note: Measurements use US standard cups, except for rice and water measured with a rice measuring cup.
Instructions:
1. Make the Latik: Cook coconut cream over low heat, stirring occasionally, until the liquid evaporates and oil separates. Strain the latik and set aside. Use the coconut oil to grease the baking tray.
2. Prepare the Glutinous Rice: Grease the tray with coconut oil. Rinse 4 cups of glutinous rice and cook with 4 cups water in a pot, stirring occasionally, until tender and the water is absorbed.
3. Prepare the Coconut Mixture: In a pan, combine coconut milk, brown sugar, and salt. Cook over medium heat until thickened. Pour the mixture into the cooked rice and stir until fully absorbed.
4. Assemble the Biko: Line the baking tray with banana leaves (optional for added flavor). Press the rice mixture into the tray and let it cool. Cut into box shapes and garnish with latik in the center.
