Easy Beef Rendang is a simplified, flavorful stew made with tender beef, coconut milk, and spices like curry powder and turmeric. Using Filipino ingredients like soy sauce and vinegar, this easy version offers a rich, savory dish with a mild heat, perfect with rice.
Ingredients
500g beef cut into chunks
1 cup coconut milk (gata)
1 cup coconut cream (kakang gata)
3 tbsp cooking oil
1 onion, chopped
4 cloves garlic, minced
1 thumb-sized ginger, grated
1 stalk lemongrass (optional)
2 tbsp curry powder
1 tsp turmeric powder
1 tsp paprika
1-2 red chilies, chopped (optional)
2 tbsp soy sauce
1 tbsp vinegar
1 tsp sugar
1-6 bay leaves
Salt and pepper to taste
Instructions
1.Heat oil in a pan. Brown beef chunks on all sides, then set aside. 2.In the same pan, sauté onion, garlic, ginger, and lemongrass for 2-3 minutes. 2.Stir in curry powder, turmeric, paprika, and chilies. Cook for 1 minute. 3.Add beef back, then pour in coconut milk, soy sauce, vinegar, sugar, and bay leaves. 4.Simmer on low heat, covered, for 1.5-2 hours, stirring occasionally. 5.Stir in coconut cream and cook uncovered for 10-15 minutes until sauce thickens. 6.Adjust salt and pepper, then serve with rice.
