Pakbet or Pinakbet is a popular vegetable dish that originated from one of the northern provinces of the Philippines, Ilocos. The vegetables used on this dish are usually grown in the back yard of every villager are available almost all year long. Bitter Melon, eggplant, okra, and string beans are just some of the vegetables that make-up this delightful dish plus with the taste of coconut milk that gives an additional twist to your dish.
Ingredients:
2 tbsp Vegetable oil
4 cloves Garlic, minced/garlic powder
1 pc Onion, diced
3 pcs Tomato, diced
¼ kg Sliced Pork Belly
2 tbsp Bagoong Alamang
3 cups Water
2 cups Cubed Kalabasa
1 cup Sliced Okra
1 cup Sliced Sitaw
1 cup Sliced Ampalaya, rinsed well
2 cups Sliced Eggplant
1 cup Small Shrimp
2 sachets 8g Maggi Magic Sarap
1 pack Nestle All Purpose Cream 250ml
Instruction:
Heat oil, sauté garlic, onion, tomatoes.
Add squash, ampalaya and okra for 5 minutes until vegetables turned light in color.
Stir in stringbeans and eggplant.
Add pork granules to season the dish and cook for a couple more minutes.
Pour in coconut milk and bring to boil.
Cook for 5 minutes more until vegetables are done.
Add kangkong leaves and simmer for another minute.
